Sitting on the kitchen counter of almost every West Indian home is some version of this hot pepper sauce. It's a staple in the Caribbean. My mother has been making this sauce her entire life and allowed my chef/husband to collaborate with her (given his love for all things spicy). Together they worked tirelessly for over a year to refine the recipe. It has been a true labor of love, another family affair at 191 Knickerbocker. We began placing small bottles of this sauce on our tables for our customers to taste. What followed was an overwhelming amount of encouragement, so we began bottling them for sale.
